The Cafe’s conservationist chefs work wonders, creating delicacies from species threatening to overwhelm the ecosystem. Other favorites include pasta with garlic mustard pesto (an invasive herb native to Europe and Asia) and roast nutria, (a large semi-aquatic rodent introduced for fur trading).
